Learn to cook the traditional filipino PANCIT

Pancit is a popular Filipino noodle dish that comes in various regional variations. One well-loved version is Pancit Canton. Here's a simple recipe for you:

Ingredients: 250g Pancit canton noodles 2 tablespoons cooking oil 3 cloves garlic, minced 1 onion, sliced 1/2 cup sliced pork 1/2 cup sliced chicken 1/2 cup shrimp, peeled and deveined 1/2 cup sliced Chinese sausage (Chorizo de Bilbao) 1/2 cup sliced cabbage 1 carrot, julienned 1/2 cup snow peas (sitsaro) 1/4 cup soy sauce 1 cup chicken broth Salt and pepper to taste Calamansi or lemon wedges for serving Chopped green onions for garnish Instructions: Prepare the Pancit Canton Noodles: Soak the pancit canton noodles in warm water for about 10-15 minutes or until they become soft. Drain the water and set the noodles aside. Sauté Aromatics: In a wok or large pan, heat cooking oil over medium heat. Sauté garlic and onions until fragrant. Cook Meat and Seafood: Add pork, chicken, shrimp, and Chinese sausage. Cook until the meat changes color and the shrimp turns pink. Add Vegetables: Toss in cabbage, carrots, and snow peas. Stir-fry for a few minutes until the vegetables are slightly tender yet still crisp. Season with Soy Sauce: Pour soy sauce over the meat and vegetables. Mix well. Incorporate Noodles: Add the soaked pancit canton noodles to the pan. Toss and stir until the noodles are well-coated with the ingredients. Pour Chicken Broth: Pour chicken broth over the noodles and continue to stir-fry. Allow the noodles to absorb the flavors and cook until the liquid is mostly absorbed. Season and Finish: Season with salt and pepper to taste. Continue cooking until the noodles are fully cooked yet still firm. Garnish and Serve: Garnish with chopped green onions.
